Trentino’s mountain potatoes are nicely matured and with a firm flesh that stays that way even after various months of natural storage.
What distinguishes it from others is its special flavour: pleasing and full, even when tasted without seasoning.
In Trentino, this tuber is cultivated at altitudes up to 1500 m above sea level.
The AltopianodelleGiudicarie plateau, at an altitude between 600 and 900 m a.s.l., is famous for growing the ‘Montagnine’: the clean air, soft soil and the passion of the farmers makes them more genuine and tastier.
It has been demonstrated that mountain potatoes, growing at altitudes higher than 400 m a.s.l., are healthier because they contain greater quantities of vitamin C and a lower concentration of glucose.
Montagnine potatoes are seasonal, and are placed on the market only between autumn and spring, according to the natural cycle of the seasons, and are stored (Natural conservation) without chemical treatment against sprouting, by exploiting the lower temperatures of the valley.
For all these reasons, these potatoes have a genuine and unmistakable flavour.
