Azienda Agricola Salvetta, a simple partnership, is an ancient farm that has been growing Nosiola grapes in Madruzzo, a hamlet of Sarche (Trentino), the only native Trentino white variety, which grows in a sub-Mediterranean microclimate. The Company vinifies grapes with skins for a week, then refines Nosiola wine in acacia barrels. The Nosiola grape is also withered and pressed during Holy Week, with fermentation and aging for 5 years, giving rise to the eighteenth-century Vin Santo Trentino. The company has been certified organic since 2012 (ICEA).
