Ingredients for the polenta
1.5 kg potatoes
250 gr corn flour
100 gr buckwheat flour
1 large onion
300 gr sweet semi-cured cheese
Peel the potatoes and cut into wedges.
Boil the potatoes in salted water, the potatoes must be covered by water.
At the end of cooking, press the potatoes with the pirot (special tool), keeping them in their cooking water.
Gradually add the corn flour and buckwheat flour. Mix well.
Cook for about 20 minutes.
Separately, brown the thinly sliced onion in extra virgin olive oil.
Cut the cheese into cubes.
Add the browned onion and cheese to the polenta. Mix well.
Cook for about 15 minutes.
