Mix the goat cheese with a fork to soften, add a dash of hot pepper to taste. Spread the cream on the slices of carne salada, roll up and tie with the blades of chive. Put in fridge. Mix the olive oil with Trentino type aromatic vinegar, salt and pepper. Garnish the meat rolls with chopped parsley and chives, dress with the vinaigrette and serve immediately.
