Apple Torte



    150 g flour
    50 g sugar
    75 g Trentino butter
    1 egg
    ½ lemon rind and a little juice
    1/4 teaspoon salt
    1 tablespoon baking powder
    a tablespoon of apricot jam
    2 Trentino Golden Delicious apples

    Mix flour and baking powder, set on a board, add sugar and salt and make a well in the center for the softened butter, an egg, and the grated lemon rind. Mix quickly moving the flour toward the center. Make a smooth loaf and let rest in a cool place for 30 min covered by a cloth or saran wrap. In the meantime peel the apples, dice and sprinkle with sugar and lemon juice. Distribute the pastry in the pan leaving more pastry on the sides. Make a layer of jam, make concentric patterns with the apples, sprinkle with cinnamon or more jam. Bake in a pre-heated oven at 180°C for about 30 min.
