Mardi Gras fritters with apples and raisins

Ingredients

    - 50 g soft butter 
    - 350 g flour
    - 80 g sugar
    - 150 g milk
    - 1 egg
    - lemon rind
    - 1/2 packet of baking powder
    - a pinch of salt 
    - 1 Fuji or Golden Delicious apple
    - 80 g raisins
    - 2 tablespoons  grappa
    - peanut oil
    - powdered sugar

We used a “Bimby” food processor to prepare these fritters but any food processor will do. 

Procedure:

Insert the rind of 1 lemon and the milk into the Bimby  mixing bowl, process 5 seconds speed 4; add the baking powder: 5 seconds speed 6; add egg, butter, salt: 5 seconds speed 6; add flour: 20 seconds speed 7. 

After having soaked the raisins in the grappa, peel and dice the apple, add together with the drained raisins to the mixture and blend 15 seconds speed  5 counterclockwise. 

Pour plenty of oil in a frying pan and fry a few fritters at a time, using two tablespoons to help with shaping.  

Fry until golden brown, turning several times to brown evenly on all sides.  

Drain well by rolling in paper towels.

Put the Mardi Gras fritters on a serving plate and dust with powdered sugar.
