Their workshop is located in Arco (TN) near Lake Garda, there they bake cookies with local grains anche sourdough loafs daily. They also set up Bio Pastificio Arx ®: this brand is dedicated to their bronze-die pasta that is finished with a slow drying process.
When it comes to craft their high - end pasta, they only use organic flours from local and italian ancient grains. They take part to local farmer markets with their certified organic products, and that's where they source all the organic raw materials they used in their workshop and restaurant. Only fresh and seasonal ingredients are allowed in their no-fril kitchen, so that they can always bring the best quality on your table.
