Casat della Valfloriana

Organic cheese made using about 2 kg of full fat raw milk – tastes strongly of good fresh milk.

The name ‘Casat’ or ‘Casët’ comes from the name Casatta that is the main hamlet of Valfloriana, made from the ancient local recipe recovered by AgriturFior di Bosco. 

Available also in another version, "Affinato al Fieno" (ripened under hay), each cheese weighing 500 g. This version is ripened in our dairy under organic hay for about 15 days. Indeed, the fragrance of the hay (especially second cutting hay) transfer to the cheese the intense flavours and aromas of our mountains.
