A traditional Fassa cheese, produced by the Caseificio Sociale Val di Fassa, featuring intense flavour and strong taste. It too belongs to the washed rind category, which allows the formation of fermentations that result in noteworthy fragrances and aromas. Made with the raw full fat milk of cow breeds such as Bruna and GrigioAlpina, it is aged for 2 to 8 months.
The shape of the cheeses is cylindrical and they weigh about 10-12 Kg. The rind is oily and ranges in colour from yellow to ochre to red. It is produced without preservatives and contains only milk, rennet and salt.
