Cattle are one of Trentino’s main assets and thanks to ample pastures, natural feeds, traditional and non-intensive rearing methods the cows produce top quality milk. It is then processed in the mountain dairies, called ‘malghe’, or in highly mechanised dairies to produce tasty cheeses whose flavours change from valley to valley…each one deserving to be tasted!
