Homemade butter

Homemade butter with a glass bottle

Ingredienti

Avete mai provato a fare il burro in casa?

No, direte, troppo complicato!

This is not just an old family recipe but could be considered a kind of experiment, very useful for children who can see the process of making cream into butter with their own eyes through the glass bottle.
Take a 1-lt wide-mouthed glass bottle.
Pour in 150 ml of fresh cream. Be careful that the cream is not too hot or too cold. The ideal temperature for this preparation is 14°C.
Close the lid accurately to avoid spraying cream all over the kitchen
Start shaking the bottle at a good pace which must be kept constant for about 10 minutes (not too fast but not too slow)
What happens inside the bottle?
After a few minutes you will no longer hear the usual noise of liquid hitting against the sides of the bottle, actually you will not hear any noise. You have reached the first stage. It is probable that at this point you will stop a second (not too long!) open the bottle and taste the cream coating the lid.
Continue shaking the bottle for a few minutes (be sure you have closed the bottle well after the tasting session!) and you will hear a new sound – a solid going ploff ploff! Your butter is ready and you can take it out of the bottle and put it on waxed paper or parchment paper.
Put it in the refrigerator for a few hours
In the bottle there will be a little whitish liquid. Do you know what it is called?  Buttermilk, a good remedy for constipation…but don’t drink too much of it!
Some tips;:
If you have the fortune to go to a mountain hut in the summertime, ask the keepers for some cream,  take it home and try the experiment. You will find out that in this case your butter is yellow, due to the herbs and flowers that the cows ate in the pasture. You can use special moulds to give unique shapes to your butter, let them set directly in the moulds in the fridge.
The best way to enjoy your butter is on a nice slice of bread and homemade jam. We suggest the Agritur Dalaip Dei Pape jams that you can purchase online.
If you are looking for a good butter to purchase, made by artisans with raw Alpine cream, then you must come to Primiero in the summer and buy the Botìro di Primiero di Malga, but this is a different story…
