Born from an unexpected challenge and transformed by the cheesemakers' ingenuity into a new speciality of Val di Fassa

Some cheeses are rooted in centuries-old traditions, while others are born from the ability to adapt, experiment and find new paths. Gardecia belongs to the latter category. It was created during the lockdown, when the cheesemakers at Caseificio Sociale Val di Fassa had to face an entirely new situation. From a necessity came an idea, and from that idea a cheese that has since become part of the dairy's production.

Made with whole pasteurised cow's milk, Gardecia is characterised by its grainy texture, reminiscent of long-aged cheeses such as Trentingrana. Time is what truly shapes its character: it is aged for between 4 and 12 months, allowing its aromas to evolve and become increasingly complex. 

On the palate, it has a clean, persistent savouriness that becomes more pronounced as the ageing progresses. Each additional month brings new nuances to its flavour profile, making it interesting to discover at different stages of maturation. 

Its name recalls Gardeccia, one of the most evocative places in the Dolomites of Val di Fassa, and embodies the spirit of a valley that preserves its traditions while continuing to look towards the future.

Gardecia shows how something good can emerge even from an unexpected moment: a cheese born from necessity and transformed into a new expression of the creativity and craftsmanship of Caseificio Sociale Val di Fassa.
