Primiero is a cheese that belongs to the large family of local washed rind cheeses, and stands out for being processed using raw milk that preserves the characteristics of the location in which it is produced, including the specific feed the cows eat, their breed and the climate.
Primiero features an oily rind (“lisp” in dialect) deriving from the hand treatment with salt and water. This favours the growth of special fermentations and the formation of strong, unique aromas that differ according to aging period. Available in the fresh, ripe or Malga versions. The latter is made using only mountain pasture milk.
